Beef Kebabs with Minted Tomato Salad

Charred beef skewers with a bright tomato onion salad full of mint and lemon.

Ingredients

  • 1 1/2 pounds sirloin, cubed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 3 tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 3/4 cup fresh mint leaves
  • 1 lemon, juiced
  • Warm flatbread
  • Olive oil, salt, and pepper

Method

  1. Season beef with cumin, paprika, olive oil, salt, and pepper.
  2. Thread onto skewers and grill or broil until charred outside.
  3. Toss tomatoes, onion, mint, lemon juice, olive oil, salt, and pepper.
  4. Rest kebabs for 5 minutes.
  5. Serve with minted tomato salad and flatbread.

Fresh Mint Tip

Tear mint into the tomato juices right before serving so the salad smells garden-fresh.
