Ingredients
- 1 1/2 pounds chicken breast or thighs, cubed
- 1 lemon, zested and juiced
- 2 teaspoons oregano
- 2 cups cooked bulgur
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 cup parsley, chopped
- 3/4 cup fresh mint, chopped
- Olive oil, salt, and pepper

Dinner
Grilled lemon chicken skewers with parsley, tomato, bulgur, cucumber, and lots of mint.
For the brightest tabbouleh, chop mint right before tossing it with the tomatoes.
