Chicken Souvlaki with Minty Tabbouleh

Grilled lemon chicken skewers with parsley, tomato, bulgur, cucumber, and lots of mint.

Ingredients

  • 1 1/2 pounds chicken breast or thighs, cubed
  • 1 lemon, zested and juiced
  • 2 teaspoons oregano
  • 2 cups cooked bulgur
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1 cup parsley, chopped
  • 3/4 cup fresh mint, chopped
  • Olive oil, salt, and pepper

Method

  1. Marinate chicken with lemon juice, oregano, olive oil, salt, and pepper.
  2. Thread onto skewers and grill or broil until cooked through.
  3. Toss bulgur with tomatoes, cucumber, parsley, mint, lemon zest, olive oil, salt, and pepper.
  4. Rest chicken for a few minutes.
  5. Serve skewers with minty tabbouleh.

Fresh Mint Tip

For the brightest tabbouleh, chop mint right before tossing it with the tomatoes.
