Coconut Lamb Curry with Mint Chutney

Slow-simmered lamb in coconut curry balanced by a bright mint cilantro chutney.

Ingredients

  • 1 1/2 pounds lamb stew meat
  • 1 onion, diced
  • 2 tablespoons curry powder
  • 1 can coconut milk
  • 1 cup crushed tomatoes
  • 1 cup cilantro leaves
  • 1 cup fresh mint leaves
  • 1 green chile
  • 1 lime, juiced
  • Salt, oil, and rice

Method

  1. Brown lamb in oil, then remove from the pot.
  2. Cook onion with curry powder until fragrant.
  3. Add coconut milk, tomatoes, lamb, and salt; simmer until tender.
  4. Blend cilantro, mint, chile, lime juice, and salt into chutney.
  5. Serve curry over rice with mint chutney.
