Crispy Tofu Mint Peanut Noodles

Crispy tofu and cool noodles tossed with peanut lime sauce, cucumber, and fresh mint.

Ingredients

  • 14 ounces firm tofu, pressed and cubed
  • 8 ounces rice noodles
  • 1 cucumber, julienned
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 limes, juiced
  • 1 tablespoon maple syrup or honey
  • 1 cup fresh mint leaves
  • Oil, salt, and chile crisp

Method

  1. Pan-fry tofu in oil until crisp and golden, then season with salt.
  2. Cook rice noodles, rinse briefly, and drain.
  3. Whisk peanut butter, soy sauce, lime juice, sweetener, and water into a sauce.
  4. Toss noodles with cucumber, mint, peanut sauce, and tofu.
  5. Serve with chile crisp if desired.

Fresh Mint Tip

Add mint after the peanut sauce is loosened so the leaves do not clump together.
