Ingredients
- 14 ounces firm tofu, pressed and cubed
- 8 ounces rice noodles
- 1 cucumber, julienned
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 2 limes, juiced
- 1 tablespoon maple syrup or honey
- 1 cup fresh mint leaves
- Oil, salt, and chile crisp

Dinner
Crispy tofu and cool noodles tossed with peanut lime sauce, cucumber, and fresh mint.
Add mint after the peanut sauce is loosened so the leaves do not clump together.
