Mojo Pork with Minted Black Beans

Garlicky citrus pork with cumin black beans, orange, lime, and fresh mint.

Ingredients

  • 1 1/2 pounds pork tenderloin or shoulder steaks
  • 1 orange, juiced
  • 2 limes, juiced
  • 4 garlic cloves, minced
  • 1 teaspoon cumin
  • 2 cans black beans
  • 1/2 cup chopped fresh mint
  • 1 bay leaf
  • Olive oil, salt, and pepper

Method

  1. Marinate pork with orange juice, lime juice, garlic, cumin, olive oil, salt, and pepper.
  2. Sear or roast pork until cooked through, then rest.
  3. Simmer black beans with bay leaf, a splash of marinade, salt, and pepper.
  4. Fold mint into the beans off heat.
  5. Serve sliced pork with minted black beans and rice.

Fresh Mint Tip

Mint loves citrus; add extra lime at the table if the beans need more lift.
