Lemon Mint Orzo with Shrimp

Tender orzo, seared shrimp, peas, feta, lemon, and mint for a bright weeknight dinner.

Ingredients

  • 12 ounces orzo
  • 1 pound shrimp, peeled
  • 1 cup peas
  • 1/2 cup crumbled feta
  • 1/2 cup torn fresh mint
  • 1 lemon, zested and juiced
  • 2 garlic cloves, minced
  • Olive oil, salt, and pepper

Method

  1. Cook orzo in salted water and reserve 1 cup cooking water.
  2. Sear shrimp with olive oil, garlic, salt, and pepper until just cooked.
  3. Toss orzo with peas, lemon zest, lemon juice, feta, and a splash of pasta water.
  4. Fold in shrimp and mint off heat.
  5. Finish with olive oil and black pepper.

Fresh Mint Tip

Tear mint over the pot after the heat is off so it perfumes the orzo without turning bitter.
