Lentil Stuffed Peppers with Mint Tomato Sauce

Tender peppers filled with lentils, rice, warm spices, and a tomato sauce sparked with mint.

Ingredients

  • 4 bell peppers, halved and seeded
  • 2 cups cooked lentils
  • 1 cup cooked rice
  • 1 onion, diced
  • 1 teaspoon cumin
  • 1 can tomato sauce
  • 1/2 cup chopped fresh mint
  • 1/4 cup parsley
  • Olive oil, salt, and pepper

Method

  1. Cook onion in olive oil with cumin until soft.
  2. Stir in lentils, rice, parsley, salt, pepper, and a spoonful of tomato sauce.
  3. Fill pepper halves and place in a baking dish.
  4. Mix remaining tomato sauce with mint and a splash of olive oil; spoon around peppers.
  5. Bake at 375 F until peppers are tender.

Fresh Mint Tip

Add half the mint before baking and half after so the sauce has depth and fresh aroma.
