- 2 zucchini, half-moon sliced
- 1 cup basil leaves
- 1/2 cup fresh mint leaves
- 1/3 cup toasted almonds
- 1/2 cup grated parmesan
- 1 garlic clove
- 1 lemon, zested
- Olive oil, salt, and pepper

Dinner
Chewy orecchiette, browned zucchini, parmesan, basil, and fresh mint pesto.
Use more basil than mint in pesto so the mint lifts the sauce without making it taste like dessert.
