Ingredients
- 1 pound ground chicken
- 1/3 cup breadcrumbs
- 1 egg
- 2 garlic cloves, grated
- 6 cups chicken stock
- 1/2 cup rice
- 3 cups baby spinach
- 1 lemon, juiced
- 1/2 cup chopped fresh mint
- Salt, pepper, and olive oil

Dinner
Tender chicken meatballs in a light lemon rice broth finished with spinach and mint.
Add mint to individual bowls rather than the pot so leftovers do not taste dull.
