Minted Chicken Shawarma Rice Plates

Juicy shawarma-spiced chicken over rice with cucumber tomato salad and cool mint yogurt.

Ingredients

  • 1 1/2 pounds boneless chicken thighs
  • 2 teaspoons shawarma spice blend
  • 2 cups cooked rice
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1 cup plain yogurt
  • 1/2 cup chopped fresh mint
  • 1 lemon, juiced
  • Olive oil, salt, and pepper

Method

  1. Season chicken with shawarma spice, olive oil, salt, pepper, and half the lemon juice.
  2. Sear or grill chicken until browned and cooked through, then slice.
  3. Toss cucumber and tomatoes with salt, pepper, olive oil, and remaining lemon juice.
  4. Stir yogurt with mint and a pinch of salt.
  5. Serve chicken over rice with salad and mint yogurt.

Fresh Mint Tip

Add mint to the yogurt while the chicken rests so the sauce tastes fresh but integrated.
