Minted Mushroom and Pea Pilaf

Buttery mushrooms, sweet peas, fluffy rice, lemon zest, and fresh mint folded in at the end.

Ingredients

  • 1 1/2 cups basmati rice
  • 12 ounces mushrooms, sliced
  • 1 onion, diced
  • 2 1/2 cups vegetable stock
  • 1 cup peas
  • 1/2 cup chopped fresh mint
  • 1 lemon, zested
  • 2 tablespoons butter
  • Salt, pepper, and olive oil

Method

  1. Brown mushrooms in olive oil and butter, then set aside.
  2. Cook onion until soft, add rice, and stir until glossy.
  3. Add stock, salt, and pepper; cover and simmer until rice is tender.
  4. Fold in peas and mushrooms, cover for 5 minutes off heat.
  5. Fluff with lemon zest and mint.

Fresh Mint Tip

Add mint after the rice rests so steam does not mute its flavor.
