- 4 salmon fillets
- 2 tablespoons white miso
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 3 cups cooked rice
- 1 cucumber, thinly sliced
- 4 radishes, thinly sliced
- 1/2 cup fresh mint leaves
- 2 tablespoons rice vinegar
- Sesame seeds

Dinner
Savory miso salmon over rice with cucumber radish pickles and fresh mint.
Add mint to quick pickles right before serving so vinegar does not darken the leaves.
