Ingredients
- 1 1/2 pounds pork tenderloin, cubed
- 2 cups pineapple chunks
- 1 red onion, cut into chunks
- 1 lime, juiced
- 1 red chile, minced
- 2 scallions, sliced
- 3/4 cup fresh mint leaves, chopped
- Olive oil, salt, pepper, and cumin

Dinner
Sweet charred pineapple, savory pork, lime, chile, scallion, and fresh mint.
Add mint to the salsa after mincing the chile so you can control the heat before the herb goes in.
