Sardine Tomato Pasta with Mint Breadcrumbs

A bold tomato sardine pasta topped with lemony toasted breadcrumbs and chopped mint.

Ingredients

  • 12 ounces spaghetti
  • 2 cans sardines in olive oil
  • 3 garlic cloves, sliced
  • 1 can crushed tomatoes
  • 1/2 cup breadcrumbs
  • 1/2 cup chopped fresh mint
  • 1 lemon, zested
  • Red pepper flakes, salt, and pepper

Method

  1. Cook spaghetti in salted water and reserve pasta water.
  2. Toast breadcrumbs with a little sardine oil until golden; stir in lemon zest and mint off heat.
  3. Cook garlic and red pepper flakes, then add tomatoes and simmer briefly.
  4. Fold sardines into the sauce, then toss with pasta and pasta water.
  5. Serve topped with mint breadcrumbs.

Fresh Mint Tip

Let breadcrumbs cool for a minute before adding mint so the herb stays green.
