Shrimp Tacos with Mint Lime Slaw

Fast shrimp tacos with crunchy cabbage, lime, jalapeno, and cool fresh mint.

Ingredients

  • 1 pound shrimp, peeled
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 8 corn tortillas
  • 3 cups shredded cabbage
  • 1/2 cup fresh mint leaves, chopped
  • 1 jalapeno, thinly sliced
  • 2 limes, juiced
  • Avocado, salt, and olive oil

Method

  1. Season shrimp with chili powder, cumin, salt, and olive oil.
  2. Toss cabbage with mint, jalapeno, lime juice, salt, and a little olive oil.
  3. Sear shrimp until pink and lightly browned.
  4. Warm tortillas until pliable.
  5. Fill tortillas with shrimp, mint lime slaw, and avocado.

Fresh Mint Tip

Chop mint just before adding it to cabbage so the slaw smells fresh at the table.
