- 2 cups shredded cooked chicken
- 2 cucumbers
- 1 tablespoon grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 cup fresh mint leaves
- Sesame seeds and chile oil

Dinner
Tender chicken, warm rice, crunchy smashed cucumber, ginger dressing, and mint leaves.
Salt cucumbers lightly only after smashing so they stay crunchy with the mint.
