Vegetable Biryani with Mint Raita

Spiced rice, vegetables, cashews, raisins, and a cooling cucumber mint raita.

Ingredients

  • 2 cups basmati rice
  • 1 onion, sliced
  • 3 cups mixed vegetables
  • 2 teaspoons biryani masala or garam masala
  • 1/4 cup cashews
  • 1/4 cup raisins
  • 1 cup yogurt
  • 1/2 cucumber, grated and squeezed
  • 3/4 cup chopped fresh mint
  • Salt, oil, and lemon juice

Method

  1. Parcook rice in salted water until just tender, then drain.
  2. Cook onion and vegetables with spices until fragrant and partly tender.
  3. Layer rice with vegetables, cashews, and raisins; cover and steam gently until finished.
  4. Mix yogurt with cucumber, mint, lemon juice, and salt.
  5. Serve biryani with mint raita on the side.

Fresh Mint Tip

Chill the raita while the biryani steams so the mint tastes extra cooling.
