White Bean Skillet with Mint Gremolata

Creamy white beans, greens, garlic, tomato, and a lemony mint gremolata topping.

Ingredients

  • 2 cans cannellini beans, drained
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 can diced tomatoes
  • 4 cups chopped kale or chard
  • 1 lemon, zested
  • 1/2 cup chopped fresh mint
  • 1/2 cup parsley, chopped
  • Olive oil, salt, and pepper

Method

  1. Cook onion and two garlic cloves in olive oil until soft.
  2. Add tomatoes and beans; simmer until saucy.
  3. Fold in greens until tender and season with salt and pepper.
  4. Chop mint, parsley, lemon zest, and remaining garlic into gremolata.
  5. Spoon gremolata over the white bean skillet.

Fresh Mint Tip

Use mint in the gremolata, not the simmering beans, for the cleanest finish.
