Chilled Tomato Mint Gazpacho

A sippable tomato and cucumber gazpacho finished with fresh mint and olive oil.

Ingredients

  • 4 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1/2 red bell pepper, chopped
  • 1 small garlic clove
  • 3/4 cup fresh mint leaves
  • 2 tablespoons sherry vinegar
  • 2 tablespoons olive oil
  • Salt and black pepper

Method

  1. Blend tomatoes, cucumber, bell pepper, garlic, vinegar, olive oil, salt, and pepper.
  2. Add mint and blend again just until green flecks show.
  3. Chill for at least 30 minutes.
  4. Taste and adjust vinegar or salt.
  5. Pour into small glasses and finish with olive oil and mint.

Fresh Mint Tip

Add mint after the vegetables are smooth so its flavor stays fresh and visible.
