Cucumber Mint Kefir

Cultured kefir stirred with cucumber, mint, lemon, dill, and sea salt.

Ingredients

  • 2 cups plain kefir
  • 1/2 cucumber, grated and squeezed dry
  • 1/2 cup fresh mint leaves, finely chopped
  • 1 tablespoon chopped dill
  • 1 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • Ice, optional

Method

  1. Whisk kefir until smooth.
  2. Stir in grated cucumber, mint, dill, lemon juice, and salt.
  3. Chill for 5 minutes so the herbs bloom.
  4. Taste and adjust lemon or salt.
  5. Pour into small cold glasses, over ice if desired.

Fresh Mint Tip

Chop the mint finely enough that it suspends in the kefir instead of clumping.
