Ingredients
- 1/2 cup pearl barley, rinsed
- 5 cups water
- 1 cup fresh mint leaves
- 2 strips lemon peel
- 2 tablespoons lemon juice
- 1/4 teaspoon sea salt
- Ice

Drink
Nutty barley water chilled with lemon peel, fresh mint, and a tiny pinch of salt.
Add mint after simmering so the leaves perfume the barley water instead of cooking down.
